Production Assistant, Kitchen

The Production Assistant is essential to ensuring our clients receive nutritious and healthy food. The Production Assistant accomplishes this by covering for positions in the kitchen to ensure meals are prepared on time for distribution throughout our service area to those who are food insecure. The Production Assistant Rotates between positions as needed to assist in preparing quality meals along with accurate inventory for distribution to our clients.

DUTIES AND RESPONSIBILITIES

Assisting the Inventory Specialist

  • Receive all deliveries from vendors and product orders from the food bank. Put away product in designated storage areas in a timely manner to maintain cold chain as required. Rotate product inventory upon receipt to reflect First in First Out (FIFO) or First Expired First Out (FEFO) as required.
  • Update inventory lists as required to reflect new product additions or deletions.
  • Ensure designated CFK storage areas are properly maintained for cleanliness as per regulations. Perform deep cleaning as required and address all ODA plant tags for storage areas prior to production.
  • Ensure storage areas are organized to ensure positive inventory control, proper rotation, and food safety requirements.
  • Stage carts for each production day for specific stations to ensure ingredients are ready for production days. Cart usage will be reviewed daily and shortages or requests for additional pulls will be reported.
  • Pull product as required on a daily basis to ensure it is thawed for production. Maintain thaw logs and pull sheets. Stage refrigerated and dry products in designated areas in preparation for daily production cycle. At the end of the production day, account for remaining unused, or partially used products, as well as over runs and product loss. Document as required and take appropriate action as per SOPs.

Assisting the Cold Menu Production Lead

  • Assist, as needed, in the cold menu assembly area with restocking, product rotation, and movement of finished product to designated areas.
  • Greet, train and assign duties to all volunteers scheduled in the cold production area.
  • Maintain routing documents and ensure all carts and orders are accurate and staged for the Fleet Department.

Assisting the Cook

  • Responsible for cleanliness and organization of assigned work station and completion of sanitation SOPs for that area.
  • Responsible for compliance with safe food handling practices and HACCP documentation throughout the production cycle.
  • Responsible for following a standard formulation (recipe) during production to ensure meals prepared meet quality and portion standard, and are accurate to labels.
  • Responsible for following daily production sheet and completing all meal components assigned to that station to ensure orders are filled accurately.
  • During production/cooking, evaluating food items to ensure roper appearance/smell. Tasting food components where applicable to ensure quality.
  • Accurately packaging food items into pan/tray/containers to meet specific labeling requirements for portions. Apply all applicable ingredient and lot labels to finish products, and/or labeling to product that will be held for future production.
  • Move all finished meal components to proper storage area, or order cart as required.

Other duties

  • Participate in order cart expediting process.
  • Assist other stations as required to complete production assignments.
  • Performs other duties and special projects as assigned.
  • Participate in general kitchen sanitation as required.

QUALIFCATIONS

HS Diploma or GED preferred. Minimum, one (1) to two (2) years cooking in a high-volume food service setting. ServSafe Certified preferred, but not required.

PHYSICAL REQUIREMENTS

While performing the duties of this job, the employee is regularly required to stand; walk; use hands to finger, handle, or feel; reach with hands and arms; talk or hear; and taste or smell. The employee is occasionally required to sit; climb or balance; and stoop, kneel or crouch. The employee must regularly lift and/or move up to 25 pounds and frequently lift and/or move up to 50 pounds. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception, and ability to adjust focus. While performing the duties of this job, the employee is frequently exposed to wet and/or humid conditions and moving mechanical parts. The noise level in the work environment is usually moderate
